Standard operating procedures, such as FS1050-2 STANDARD OPERATING PROCEDURE (SOP) FORM-EXAMPLE, must be followed and tasks performed according to schedule. Cleaning and sanitation procedures are described on Standard Operating Procedure forms, which will include a list of chemicals used, sanitation procedures and frequencies, and identify the person(s) responsible for carrying out such procedures.
Prerequisite programs (PRPs) are the basic conditions and activities needed to maintain a hygienic environment throughout the food supply chain. Every organization in the food supply chain is required to have its own set of PRPs that address food safety issues in its unique environment. Which PRPs the company implements will depend on the nature of its business and its place in the food safety chain. These PRPs should be based on established “good practices”.
